Chocolate Chip Oatmeal Cookies
These soft and chewy chocolate chip oatmeal cookies are simply delicious.
Ingredients
- 1 cup shortening
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 cups quick 1-minute oats or old fashioned oats
- 2 cups flour
- 1 1/2 cups chocolate chips
Instructions
- Preheat the oven to 350°
- Prep the cookie sheet with parchment paper, or a cookie liner.
- In a large mixing bowl, blend together the 1 cup of shortening, 2 eggs, 1 cup of granulated sugar, 1 cup of brown sugar, and the 1 tsp. of vanilla until well blended.
- Add the 1 tsp. of baking soda, 1 tsp. of baking powder, 1/2 tsp of salt, and 1 cup of flour. Mix until blended.
- Add the second cup of flour, and mix until well blended.
- Add in the 2 cups of oats and mix until incorporated
- Add the 1 1/2 cups of chocolate chips and mix in by hand
- Drop a heaping tbsp of batter onto the cookie sheet. Or, you can weigh each cookie scoop to 1 oz
- Bake for 10 - 12 minutes.
Notes
You want to take the cookies out when they are golden brown on top and still look slightly gooey. The cookies will firm up once they cool.
